I very much enjoy a nice wine with any meal .
however I can't always afford the finest .
So i was reading through a wine mag i subscribe to 
and 4 types of wine cought my eye and my palate
the best part was the price .$20 and under not a bad deal for wine .

DRY........ try Gruet Sauvage Blanc de Blancs NV $17.00
The term is less about flavor than absence of sweetness,
which makes the wine feel crisp in your mouth.
(It's also known as "brut' ).
look for words like "blanc de blances"-literally,
white (wine) from whites (grapes) - or "blanc de noirs' 
(white wine from red grapes )on champagne ,cremant or cava bottles

DRY-OFF......... Try Lini 910 "Labrusca" lambrusco Rosso $ 14.00
Slightly sweeter than brut ,
these sparklers have a touch of sugar that goes well with salt and spice.
Find labels with the word "sec"( which translates to "dry".
and also go for purple lambrusco fuchsia-tinted bugey-cerdon,
and prosecco or asti.

Sweet........ Try Banfi Rosa Regale $20.00
When your trying to find a match for cakes and pies,
look to sweet sparklers .( they can also replace your desert
course entirely but where's the fun in that?!)
Think demi-sec ( half -dry) or ( sweet),
and look for brachetto d' acqui from Italy.

ROS'E......... Try Charles Baur Cre'mant d' Alsace Rose' $19.00
Color aside rose's follow the same rules as other wines,
so choose the style ( dry, off-dry, sweet )
according to what you like .
But their taste differ: 
Just a little contact with the skin of a red grape, 
adds a new demension of flavor

Tarragon Marinated Salmon Steaks
1/2 cup EVOO
1/4 cup chopped fresh tarragon
1/2 tsp salt
four 8 oz salmon steaks 
cpmbine all ingredients but salmon 
pour marinade over steaks 
let sit 15 minutes 
grill over medium high heat 
bout 2 minutes per side and serve

2 zucchini slice crosswise on an angle an 1/8 of an inch thick
salt & pepper
1 tbsp fresh lemon juice 
EVOO
2 tbsp pine nuts toasted 
wedge of parmesan cheese
layer zucchini in overlapping circles 
sprinkle with salt & pepper 
drizzle lemon juice and EVOO 
garnish with toasted pine nuts 
and shaved parmesan

2 cups chopped white rice 
3/4 cup plain yogurt
1/2 cup chopped cucumber
salt & pepper
8 squash blossoms ( the bright yellow /orange flower on plant )
combin rice,yogurt and cucumber 
season with salt and pepper to taste 
stuff miinture into blossoms 
serve immediatly.

Easy Fresh Chili salt

Easy Fresh Chili salt seasoning mix 
for seafood or fruit 
1 fresh red chilli seeded and chopped fine 
1 cup course salt 
pulse in food processor or blender 
untill well incorporated,
store refrigerated,or spread evenly on bakeing sheet
dry over night and store at room temp 
sprinkle on shrimp befor grilling or srinkle on fresh pineapple slices 
or other apple type fruit for a snack .

Yield: 1 loaf Prep Time: 15 min Cook Time: 50 min

ingredients:
2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated white sugar
4 tablespoons (1/2 stick) unsalted butter, at room temperature
2 large eggs
1 1/2 cups mashed ripe banana (about 3 bananas)
1/3 cup plain low fat yogurt
1 teaspoon vanilla extract
1 cup dark chocolate chunks or chips
1 cup halved raspberries, tossed in 1 tablespoon all-purpose flour

directions:
1. Preheat oven to 350°F. Spray a 9x5-inch loaf pan with cooking spray.
2. In a medium bowl, whisk together the flour, baking soda and salt.
3. In a separate large bowl, beat the sugar and butter with an electric mixer at medium speed until well blended (about 1 minute). Add the eggs one at a time, beating well after each addition. Add the banana, yogurt, and vanilla; beat until blended. Stir in the flour mixture; just until moist. Don't over-mix. Stir in the chocolate chunks and then gently stir in the raspberries. If you want, you can sprinkle a few additional chocolate chunks and raspberries on the top to make it look pretty.
4. Spoon the batter into the prepared pan. Bake for 50 to 60 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.

Since there have been some mixed reviews, we're adding in some tips to help you make this recipe a success (added 9/25/12)
*This recipe turns out perfect for us, so here are the details: We bake at sea level in a greased pyrex pan and we bake on the middle rack in a gas oven.
*Don't use frozen raspberries or freshly washed raspberries (they will add too much moisture).
*If you bake in a dark metal pan or if you are baking at a different altitude or using an electric oven, you may possibly get different results.
*Oven temperatures can vary quite a bit, so if you have an oven thermometer that is helpful to see if yours is recording the right temperature.
*If the top is browning too quickly, cover the top with foil in the middle of baking to prevent it from browning further.
Hope those are all helpful tips- don't be afraid to try the recipe- it's so yummy!

Green Bean Casserole:

Original recipe makes 10 servings
2 tablespoons butter 
2 tablespoons all-purpose flour 
1 teaspoon salt 
1 teaspoon white sugar 
1/4 cup onion, diced 
1 cup sour cream 
3 (14.5 ounce) cans French style green beans, drained 
2 cups shredded Cheddar cheese 
1/2 cup crumbled buttery round crackers 
1 tablespoon butter, melted 

Directions
1.Preheat oven to 350 degrees F (175 degrees C). 
2.Melt 2 tablespoons butter in a large skillet over medium heat. Stir in flour until smooth, and cook for one minute. Stir in the salt, sugar, onion, and sour cream. Add green beans, and stir to coat. 
3.Transfer the mixture to a 2 1/2 quart casserole dish. Spread shredded cheese over the top. In a small bowl, toss together cracker crumbs and remaining butter, and sprinkle over the cheese. 
4.Bake for 30 minutes in the preheated oven, or until the top is golden and cheese is bubbly.

FRUIT COBBLER

Ingredients:

Fruit
2 cups fresh or frozen blueberries (or other fruit, see below)
1/4 cup sugar (or to taste)
1/2 cup apple juice
1 tbsp cornstarch

Dumplings
1 1/2 cups flour
1 tsp baking soda
1 tsp baking powder
dash of salt
1/2 tsp sugar
3 tbsp shortening (or butter, or coconut oil)
3/4 cup milk

Directions:

Preheat oven to 350

Place apple juice in a saucepan. Stir in cornstarch and sugar until dissolved then add blueberries. Cover and turn on low heat. Heat for 10 minutes stirring periodically or until berries are thoroughly warm and desired texture is acheived. This will vary depending on whether you use fresh or frozen. (Should be like pie filling)

Meanwhile, mix together dry ingredients for the dumplings. Cut in shortening until you have a grainy cornmeal like texture. Add milk and mix until just moist.

Pour fruit mixture into a casserole dish or dutch oven. Drop dumpling mixture by spoonfuls over the top until completely covered. Bake for 15-20 minutes or until a toothpick stuck in the top of the dumplings comes out clean.

Additional Comments:

You can use any fruit with this recipe. Try it with apples, add some cinnamon and nutmeg to the fruit mixture to create warm, loving energy. You'll have to simmer the apples a bit longer.

This is great for dessert or breakfast! Serve hot with cold milk for breakfast.

This recipe contains energy for sexual energy, potency and fertility and is also very protective.

You can use pre-made canned pie filling and Bisquick or Jiffy baking mix to make this a superquick dessert.

Bread Pudding

It's very bad luck to throw away bread. Instead, use your stale bits to make bread pudding!

Ingredients:
2-3 cups cubed stale bread
1/2 cup raisins (or dried cranberries or cherries)
1/2 cup dried apple bits
1/2 cup walnut pieces (or slivered almonds)
2 cups milk (adjust as needed)
2 eggs
2 tbsp maple syrup
1 tsp cinnamon

Directions:
You will need two baking pans, one slightly larger than the other.

Preheat oven to 350 degrees.

Butter the inside of the smaller pan and spread the breadcrumbs evenly inside the pan. Sprinkle with fruits and nuts.

Beat together the milk, eggs, syrup and cinnamon and pour over the breadcrumbs. Make sure they are all saturated but not submerged. Add more milk as needed.

Fill the larger pan about half full of water and place on the center rack. Place the smaller pan inside. Cook for 45 minutes and test. If a toothpick inserted in the center comes out clean, it's done. Otherwise cook 15 more minutes and test again.

When done, lift the smaller pan out of the larger pan and set aside to cool. Turn off the oven and take out the larger pan full of water after it has cooled.


You can turn this into a savory breakfast treat by omitting the raisins, sugar and nuts and adding minced onions, celery and sausage chunks. Yum.

Save your bread ends, crusts, etc. in a freezer bag and when it's full you'll know it's time to make bread pudding!

This is a wonderful recipe for celebrating the harvest. Use fresh, locally grown fruits in season.


Ingredients:

2 green apples chopped
2 red apples chopped
2 Pears chopped
1 cup green grapes
1 cup red grapes
1 cup plain yogurt
2 tbsp lime juice (or to taste)
2 tbsp honey (or to taste)
Candied walnuts or candied pecans (Or not candied if you prefer)

Directions:

Rinse and chop fruit and place in a bowl. Set aside.

In a separate bowl, combine yogurt, lime juice and honey and whip smooth. Taste it to make sure it's right and adjust as necessary. Pour over the fruit and mix well to coat.

Sprinkle candied nuts over the salad just before serving so they stay crunchy.

Additional Comments:

This is best eaten right away. If you store it too long, the dressing starts to separate and the nuts will lose their crunch. If you are taking it along somewhere, mix the dressing and store it separately, combine the fruits and give them a good splash of lemon or lime juice. Combine the dressing, fruit and nuts just before serving.

This is a great recipe for newlyweds as it contains energy to enhance feelings of love and to promote prosperity and fertility. If you're more into the fertility than the prosperity, you can add a dash of vanilla to the dressing and bring in some color magic by omitting the green grapes and apples to use more red, if you're more into the prosperity than the fertility, use more green and add a dash of cinnamon to the dressing.

Quick Witch Tips

You could use lemon, lime or vanilla flavored yogurt as a quick dressing for this and omit the lime and honey. But it won't be as good.
