4 large potatoes
2/3 cup butter
2/3 cup flour
1 1/2 quarts milk
salt and pepper to taste
4 green onions, chopped
1 cup sour cream
2 cups bacon, cooked crisp and crumbled
5 ounces cheddar cheese, grated
Bake potatoes until done. Melt butter in medium-large saucepan. Slowly whisk in the flour until thoroughly blended. Gradually add milk to mixture, whisking constantly. Add salt and pepper.Simmer over low heat, stirring constantly. Cut potatoes in half. Scoop out pulp and set aside. Chop half the potatoe skins, discarding the remainder. When milk is hot, whisk in potato pulp. Add green onions and potato peels. Stir well. Add sour cream and bacon. Heat thoroughly. Add cheese gradually until melted. Garnish with chives, cheese and bacon.
